Pate a Choux, More Than Just Cream Puffs @ Sweet Tartlette

In this class students will learn how to make pate a choux, one of pastries most versatile doughs.  We will cover eclairs, cream puffs, aka profiteroles, crullers, and gougieres!  Class will cover the basics of making, cooking, and filling pate a choux shells.   We will also cover pastry cream, crème Chantilly and chocolate glaze.  Students will go home with an assortment of treats to show off to their friends and family.
All equipment is provided.
Students are welcome to bring an apron to protect their clothes.  Close-toed shoes are required.  Long hair should be tied back.

Class will cover the basics of making, flavoring, baking, and filling macarons.  We will also cover basic ganache and buttercream.  Students will go home with at least 2 dozen macarons in an assortment of flavors.
All equipment is provided.
Students are welcome to bring an apron to protect their clothes.  Close-toed shoes are required.

Kids Spring Cookie Decorating @ Sweet Tartlette

Learn how to decorate cookies using royal icing!
Kids will cut out Spring and Easter shapes from sugar cookie dough. While the cookies bake, Chef Sarah will demonstrate how to make the royal icing they will use to decorate their cookies. Then the real fun begins as students learn how to make easy and fun designs with the icing on the cookies.  Plus sprinkles!
All tools and equipment is provided. Kids may be dropped off or parents may wait in the front of the shop. Please provide an apron to cover clothes or wear clothes that can get messy.  Close toes shoes are required and we ask that long hair be pulled back.

Please let the staff know if your child has any allergies when signing up for the class.

Class is limited to 5 students.

Easter Cake Class @ Sweet Tartlette

Learn how to construct and decorate a cake with buttercream.  Students will learn how to tort, fill, stack, and crumb coat a 6″, 3-layer yellow or chocolate cake.   Italian buttercream will be demonstrated and students will then learn how to color and pipe beautiful and easy drop flowers, grass, and leaves with it.  Fondant eggs and an easy to make flower will top it all off.
All equipment is provided.

Students are welcome to bring an apron to protect their clothes.  Close-toed shoes are required.  Long hair should be pulled back.

Kids will learn how to make classic jelly roll cakes from scratch. We’ll do everything from mixing and baking, to filling and decorating will be covered.

Aprons or a smock are not required, but they are a good idea (a really good idea). Don’t worry if you forget to bring one though, we’ve got plenty.  Long hair should be pulled back as well.  Close-toed shoes are a must.  Students will take home a cake big enough  to share with family and friends.

Souffle @ Sweet Tartlette

Souffle is often intimidating, but it shouldn’t be. Learn how to make this classic dish in both sweet and savory variations. Students will learn how to make chocolate, Grand Marnier, and cheese souffles. Come hungry because these don’t travel. We’ll enjoy our creations in class along with a mixed green salad. Students will leave class with recipes and the ability to make these yummy dishes at home.
All equipment is provided, and students are welcome to bring an apron to protect their clothes and must wear close-toed shoes.  Long hair needs to be pulled back.

Students will learn the basics of ganache for filling, how to pipe the ganache they make, and then dip their truffle centers in chocolate and a variety of coatings. The basics of chocolate tempering will be covered. Students will get to take home a container of yummy treats.  Students are welcome to bring a liqueur of their choice to flavor their truffles.  The perfect class for a couple or for you to make a delicious Valentine for your sweetie!
All equipment is provided. Students should bring an apron to protect their clothes and wear close-toed shoes.
